Raw Berry Cheesecake
Create a raw cheesecake that is dairy free and focused on using more natural ingredients. This is a better-for-you alternative to the usually heavy and calorie-filled cheesecake. Use Pretzel Crisps® for a savory and salty addition to the crust.
For the crust
1/4 cup almonds
1/4 cup broken up Original Pretzel Crisps®
2 dates, pitted
1/2 T coconut oil, liquified
For the cheesecake filling
1 cups raw cashews, soaked in water
1/2 cup frozen mixed berries
Maple syrup, agave syrup or your preferred natural sweetener
The day before, soak raw cashews in water. Leave them overnight. Drain the mix and set to the side.
Process all of the crust ingredients into a crumble. Spoon the crumble into the bottom of a fancy jar.
Process the cashews, then add in the mixed berries. Once processed, mix in the natural sweetener to taste. Spoon this mix over the crust. Top it off with frozen berries and flowers as a garnish.
