Coconut Nests

I love all holiday baking.  I find myself looking forward to each upcoming holiday, just so I have the chance to try out new recipes and of course, go back to the recipes that I make each year.

We have a few favorites, like my mom’s sugar cookies at Christmas and a Pumpkin Roll for Thanksgiving, but since I am a coconut lover, I also look forward to Coconut Nests when Easter rolls around.

Since I love sweet and salty so much, this year, I thought I’d use the new Pretzel Crisps mini to the nests, along with the candy eggs.  I absolutely adore these new little pretzels, and they went so well in these sweet treats!!

You can fill them with whatever candy you want, but I love chocolate eggs.  These are a perfect little Easter treat!!

2 egg whites

2 cups shredded, sweetened coconut

1/3 cup sugar

2 tablespoons flour

1/2 teaspoon vanilla

1/8 teaspoon salt

Pretzel Crisps mini pretzels

assorted Easter candy eggs


Preheat the oven to 325°F.  Line 2 baking sheets with parchment paper.

In a large bowl, whisk the egg whites until frothy.  Stir in the coconut, sugar, flour, vanilla and salt.  Drop the mixture by tablespoonfuls onto the parchment paper, about 2 inches apart.  Use your fingers to form the mounds into “nests”.

Bake until the edges of the coconut are browned and the nests are set, 19-21 minutes.  Cool completely, then place mini Pretzel Crisps and candy eggs in the nests to serve.
