Fresh Avocado Salsa Recipe
My love for cooking started from a young age. I remember forcing myself up at 6:00 am on the weekends while I was in elementary school to cook up a big egg breakfast before anyone had the chance to beat me the kitchen. Somehow my parents let me survive those 7am breakfast calls and along with cooking have grown to love entertaining as well. I have to admit that sometimes it gets a little tricky remember everyone’s dietary restrictions and preferences so when I’m stumped; I keep it fresh and simple. This Avocado Salsa recipe is packed with flavor and is suitable for guests with Vegan, Vegetarian, Gluten Free and Dairy Free restrictions.
Prep time: 10 Minutes
- 1 avocado, cubed or mashed
- ½ can of corn, rinsed and drained
- ½ can black beans, rinsed and drained
- 10 cherry tomatoes slides in half
- 2 tablespoons of chopped cilantro
- ½ teaspoon of salt
- 1 lime, juiced
- ½ jalapeno
- ¼ red onion
Combine in a bowl and you’re ready for your next party.
