Fruit & Jello Pizza

Summer is here.  The weather is definitely warming up outside, and the kids are out of school.

With summer comes the start of bbq season.  I love a good backyard bbq, and will rarely turn one down if I’m invited.  I love getting together with family and friends over good food.  And I love that the kids get to run free in the summer sunshine.

I am always looking for good ideas to take to a backyard bbq.  I always like to contribute to the festivities, but sometimes, I want something different than the usual potato salad or pasta salad.  This sweet treat is a fun way to change things up a bit.  It starts off with a sweet and salty Pretzel Crisps crust, topped with a creamy layer, then a Jello and fruit layer.  It’s definitely sweet enough to serve as a dessert, but my family has always had it as a sweet side dish.  Either way, it’s perfect for summertime!

Pretzel Crisp Fruit & Jello Pizza

2 cups crushed Original Pretzel Crisps

2 tablespoons Jello powder or sugar

3/4 cup melted butter

Middle Layer:

8 oz cream cheese, softened

1/2 cup sugar

1 8-oz can crushed pineapple

1 8-oz container whipped topping

Top Layer:

1 (3-oz) package strawberry Jello

1 (15-oz) can mandarin oranges, drained

Preheat the oven to 400F.

Combine the crushed  Pretzel Crisps, Jello and butter.  Press into the bottom of a 9×13-inch baking dish. Bake for 5 minutes.  Remove from oven and cool completely.

Combine the cream cheese and sugar and beat until smooth.  Stir in the pineapple, then fold in the whipped topping.  Spread over the cooled crust.  Refrigerate.

Make the Jello according to the package directions.  Refrigerate until it starts to set up, then stir in the oranges.  Spread on top of the creamy layer, then refrigerate until the Jello has set up.

When set up, cut into squares and serve.
