Key Lime Pie Bites with a Pretzel Crisps® Crust

When I was in High School, every Wednesday night my four best friends would come over and we would have “pie night.” This consisted of us eating a different kind of pie each week as we watched Americas Next Top Model. It was by far my favorite night of the week. It was an opportunity for us all to come together, take a break from our busy weeks, and indulge in all the some guilty pleasures. This is probably one of the many reasons why I love pie so much, and I have pie night to thank for helping me perfect many different pie recipes over the years.

One of my only issues I have with pie is the crust to filling ratio. I am a strong believer that every bite should have a decent amount of crust, and often times that’s just not the case. That’s what gave me the idea for pie bites. Little pie bites with equal parts filling and crust. So today, I am happy to show all of you out there how to make the perfect pie treat (with a twist!) for those wonderful evenings spent with wonderful friends.

I chose to feature Key Lime Pie Bites, as they are super easy to make, and I also switched the crust to a Pretzel Crisps® crust because it adds the perfect salty to the pie’s sweet! Here’s what you will need: one egg, lime juice, butter, sweetened condensed milk, whipped cream, and a bag of original Pretzel Crisps®.

Step one: Pre-heat over to 350 degrees.

IMG_1317Step two: This is where things get fun. Take out all the pent up aggression from the week, and smash the Pretzel Crisps® until they are in tiny pieces (stomping, smashing and beating encouraged).

Step three: Combine 2 tablespoons of melted butter with the smashed Pretzel Crisps® pieces.

Step four: In a separate bowl combine one egg yolk, 1 cup sweetened condensed milk and approximately 3 tablespoons of lime juice (add less or more depending on your preference!).

Step five: I use tiny cupcake holders, and lay the Pretzel Crisps® crust at the bottom, pushing it down with a spoon. Then add the filling mixture, leaving a small amount of room at the top.IMG_1324

Step six: Put in the over for 10 minutes, then take out and let cool. Serve chilled with a dollop of whipped cream on top!

I have found that these work perfectly for dinner parties or get togethers! They are great finger food, and a great one-bite desert that everyone is willing to try.

Over the years my friends and I see each other less and less, but to this day we still send each other pictures every time we have a bite of pie. So try out this recipe, or any other sweet treat, and call your friends over and enjoy two of the greatest things in life- friendship & desert (specifically pie).
