Peanut Butter Chocolate Chip Pretzel Crisp Cookies

I don’t know about you, but every once in awhile I get a craving for a big, thick, chewy cookie. The key word here being “big.” I’m talking about a monster-size cookie with lots of chips, bits, and flavors, and, of course, no “regular” size cookie will satisfy my craving. It needs to be big!

On Saturday afternoon, this type of craving took over, so I whipped up a batch of larger-than-life Peanut Butter Chocolate Chip Pretzel Crisp Cookies, and, boy, were they delicious! My husband and I finished off the batch before the weekend was even over. They were those type of cookies!

Peanut Butter Chocolate Chip Pretzel Crisp Cookies

Makes 1/2 dozen

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 4 tbsp butter, softened
  • 1 egg
  • 2 tbsp vanilla soy milk
  • 1/2 cup peanut butter & chocolate chip morsels
  • 6 plain Pretzel Crisps®

Preheat oven to 350*F.

Combine all ingredients (except for the Pretzel Crisps) in a large bowl and mix well.

Roll batter into six large dough balls.

Place on a prepared baking sheet.

Then, gently press one Pretzel Crisp into the dough, pushing down cookie into a flat disk.

Bake for 15-17 minutes until cookies begin to lightly brown on top.
Allow to cool before serving.

Check out how thick these cookies are! Each bite is packed with sweet peanut butter and chocolate chip morsels and the Pretzel Crisp on top adds a slightly salty flavor to the mix.

If these cookies don’t satisfy your cookie craving, I don’t know what will!
