Ingredients

24 Buffalo Wing Pretzel Crisps®, Whole
1/2 Cup Buffalo Wing Pretzel Crisps®, Grounded in Coffee Grinder
24 Extra Large Shrimp, Peeled and Deveined
24 Snow Peas, Blanched and Sliced in Half
2 Tablespoons Grape Seed Oil
1 Tablespoon Thai Red Curry Paste
1 Thai Chili Pepper, Minced (Optional)
2 Tablespoons Unsalted Butter
1 Tablespoon Maple Syrup
1 Tablespoon Soy Sauce
1 Teaspoon Oyster Sauce
Zest and Juice of 1 Lime
Basil, Mint and Cilantro Chopped for Garnish

Directions

  1. Preheat deep fryer to 320 degrees. Add moist shrimp to ground Pretzel Crisps®. Coat well. Deep fry for 1 1/2 minutes or until shrimp begins to curl.
  2. Add grape seed oil to a heated skillet. Add curry paste, chili, butter, maple syrup, soy sauce, oyster sauce and lime zest and juice to the skillet and simmer for a couple of minutes. Toss in shrimp. Make sure shrimp is evenly coated then remove from skillet.
  3. Assemble snows peas and shrimp on Pretzel Crisps® and garnish with herbs.
