Rotel Dip for Cinco de Mayo

Cinco de Mayo is right around the corner. Are you celebrating this year? You don’t need to be Mexican to celebrate all of the delicious festivities that go along with Cinco de Mayo. Even though Mexican food can often be a calorie-laden, diet disaster– think queso dip, greasy tortilla chips, rich dips, and frozen margaritas– this recipe for Rotel Dip is healthy, packed with flavor, and guilt-free! Best of all: it’s super simple to make (just two ingredients are needed) and it’s always a crowd-pleaser, especially when served with Jalapeno Jack Pretzel Crisps.

Rotel Dip

Ingredients:

  • 1 10-ounce can of Rotel Diced Tomatoes & Green Chilies
  • 10 ounces of plain Greek yogurt

Directions:

  1. Drain juices from Rotel Diced Tomatoes & Green Chilies.
  2. Combine Rotel with Greek yogurt until fully blended.
  3. Serve with Jalapeno Jack Pretzel Crisps.
  4. To thicken Rotel Dip, refrigerate for 2-3 hours
