A great way to get your veggies in and, not to mention, a lot of flavor is to make these zucchini balls. Use Pretzel Crisps® for your crumbs, to hold the ingredients together. Dip them in any of your favorite dipping sauces to add a kick of flavor!
1 large zucchini
1 -2 eggs whisked in bowl
1 small garlic clove , finely crushed
1/2 cup Original Pretzel Crisps® bread crumbs
1 tablespoon fresh mint ,finely chopped
1/2 cup grated cheese (low in salt)
Finely dice a large zucchini and add it to a bowl. Mix in the garlic, mint, and cheese. A cheese that is less salty and more mild in flavor, such as mozzarella, works best. Pour in the Pretzel Crisps® crumbs.
Mix lightly whisked eggs into the mixture, a little at a time, until it can form balls but isn’t too wet. Roll the mixture into balls consisting of about two tablespoons of the mixture.
Bake the balls on a parchment paper-lined baking sheet at 350 degrees, for about 20 minutes. They should be slightly brown.
